Breakfast buritos.

Fresh Green/red peppers, onion and cheddar, smoked sausage.

Season up the pan with the peppers inion and sausage, add the eggs and little cheese.
Toss on warm tortillia with more cheddar and top it of with a little crumbled Fetta!
 
Onion, bell pepper, kidney beans, chopped garlic, chopped up artichoke, olive oil, salt/pep, a squirt of vinegar, chili powder.

I should have taken a picture last night. My wife made a great meal. Serano ham wrapped pork tenderloin topped with mozzarella, with home made mashed potatoes, brocoli / peas in a cream cheese based sauce, caprese salad of tomatoes, fresh mozarella with basil, olive oil and balsemic vinegar, and a fruit salad.
 
Boston Butt (aka pork shoulder)

Coated with mustard then rubbed with Brown Sugar, Cayenne pepper, black pepper, garlic powder, red pepper flakes.

Made some coconut curry sauce to try something new. Not bad, but I wish it was thicker.

The carrots were awesome. Bake 'em at 400˚, 35-40 minutes. Coat with olive oil, thyme, salt and pepper. The key is to try and use the same size so they cook evenly. I didn't care much about that though. lol

I made some Chili again on Sunday and got a picture this time. I think its good stuff but I'm a bit bias lol. Now I'm making this in a 7qt. crock pot so its a lot.

2 lbs. hamburger
3 16oz. cans of chili beans in sauce/gravy
1 12 oz. can tomato paste
2 15oz. cans tomato sauce/puree. I use fireroasted
3 small cans of mushrooms
1 small onion finely chopped
3 small to medium sweet potatos
3 cups milk or water
1 tsp. cumin
1/4 cup chili powder
1/4 cup minced garlic
1 cup jalapenos
1 cup brown sugar

Enjoy!
