Cooks, whatcha' been cooking?

I make this every time we have a party. It goes VERY well. 8 1/2 lbs of pulled pork that I marinate overnight. :drool:



Wife is making me this again this weekend, homemade meatballs. :drool:

If i get the ambition i'm going to make stuffed meat balls this weekend over pasta and tomato sauce. Nice cube of mozerella in the middle of the meat ball is delicious.

She did that for me. Did half with and half without the mozzarella. AWESOME stuff.

This weekend I am going to have to do something and post pics.

Brown rice pasta, pan-fried portobellos in olive oil, sun dried tomato, garlic, parsley, salt and pepper. Time the pasta and shrooms to finish about the same time - don't drain pasta, just grab it with tongs and throw it into frying pan with a little bit of hot water from the pasta pot (keeps the noodles from sticking together).
 
This is by far the lamest pic in this thread, but this is the first time I've ever made eggs myself... Lol I'm 34!
I like to cook, but for some reason just never make eggs...lol
Anyways, redskins And an English muffin.. Yumm

2 eggs whipped together w/ 1T of Almond Milk, Salt, Pepper, and Parsley. I cooked the veggies in the pan though first, to season the pan. Orange pepper, 1 mini-Bella, red onion, chopped garlic, sun dried tomato and olive oil. Tossed some salsa on top.

I made some Cuban beans and rice, but I used brown rice instead of the white stuff. Im kind of upset with the picture, because it looked beautiful in the pan. Oh well, maybe next time.

I was looking for something I could make with the limited supplies I have on hand. I was pleasantly surprised.


I love when i can use leftovers for new shit. Tomorrow is a mushroom/garlic hummus omelet for lunch, and a fried egg over cuban black bean rice for dinner. I wish I had the money to cook real good shit, as well as the kitchen/equipment. It's fun.
 
I made a beautiful dinner yesterday, but forgot to take pictures because I was so hungry. I let my New York Strip sit out for about 30 minutes, then seasoned it with kosher salt, cracked black pepper, and a pinch of creole seasoning. I let it sit for another 10 minutes while I got the grill going. Once the grill was at 650 degrees, I seared the steak on both sides (rotated 45 degrees on each side for perfect grill marks). I then dropped the temp to 450ish to cook it to a nice even medium. I also had a baked potato and grilled zucchini (seasoned with kosher salt and cracked pepper). I let the steak sit for 5 minutes while I finished the zucchini. No steak sauce needed, ever.

Maybe next time I'll get pics.
