Ingredients[/h]
  • 1 pound sweet Italian sausage
  • 3/4 pound lean ground beef
  • 1/2 cup minced onion
  • 2 cloves garlic, crushed
  • 1 (28 ounce) can crushed tomatoes
  • 2 (6 ounce) cans tomato paste
  • 2 (6.5 ounce) cans canned tomato sauce
  • 1/2 cup water
  • 2 tablespoons white sugar
  • 1 1/2 teaspoons dried basil leaves
  • 1/2 teaspoon fennel seeds
  • 1 teaspoon Italian seasoning
  • 1 tablespoon salt
  • 1/4 teaspoon ground black pepper
  • 4 tablespoons chopped fresh parsley
  • 12 lasagna noodles
  • 16 ounces ricotta cheese
  • 1 egg
  • 1/2 teaspoon salt
  • 3/4 pound mozzarella cheese, sliced
  • 3/4 cup grated Parmesan cheese

  1. In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 tablespoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  2. Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  3. Preheat oven to 375 degrees F (190 degrees C).
  4. To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13 inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  5. Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
i have made this 4 times turned out great everytime, only thing we change is no suger and regular italian sausage



been doing apple pie's also , but have not got the crust perfect yet.

i've done a pork butt twice now. i did a 24 hour brine
Ingredients
Brine:
8 ounces or 3/4 cup molasses
12 ounces pickling salt
2 quarts bottled water
6 to 8 pound Boston butt

then just rubbed it with salt and pepper.

10.5 hours at about 210˚ - or yank it out when the inside temp gets around 160˚. wrap in aluminum foil for another hour or two, stored in a cooler wrapped in dry towels.

then it'll just fall apart.

i don't really do that stuff anymore (off meat/dairy - long story), but if i were going to do another one, i'd rub it with brown sugar and chili powder.

i did some chickens in the smoker as well. they were THE juiciest chickens i've ever seen. Hickory + apple juice.

when i carved them, the juice went flying all over. the meat literally fell off the bone.

Sorry no pictures but I did a few things in the crock pot last week. I made my loaded sweet potato beef chili and some pulled pork! It all turned out pretty good. I'll get pictures next time
 
I have mondays off and spend most of the day watching my little one, but sometimes I get a chance to make food.
Today I made a Shiner Bock Beef Stew/roast. Black angus beef, idaho gold potatoes, onion, celery, carrots, garlic, beer, and a shit ton of various spices. Put it in the slow cooker for the last 6 hours. Only problem is that I'm hungry as a mofo right now and the damn smell is killing me. Might have to go sneak a taste, lol.
I think I'm going to start making something to put in the crock pot every week. If I plan it out I can get all the supplies over the weekend and cut everything up so all I have to do is throw it in there and turn it on.

On a side not, I have a ton of King Salmon that I got from my brother when he went on a fishing trip up somewhere in B.C. area. I'm not real knowledgable on cooking fish. Any good suggestions? I usually marinate it for a day and grill it, and it works out well, but was wondering if anyone had any other ideas.
 
I wish I lived in a house where I could actually buy enough stuff to make my dinners worth while. Nowadays if I want to cook something fancy I just go to my dads house and make it for everyone. Although it's not on the level of you guys.
 
you don't have to cook a ton, Paul. i just cut up shit as i go, and keep it in zip-lock bags in the fridge. cook small enough portions to where i don't have leftovers. it just requires that you plan ahead a little bit more.

Sugar shock fruit dip. Half sour cream, half cool whip and brown sugar to taste, garnish with a mint leaf! I've also had it with just sour cream and brown sugar, but i like it with the cool whip. Adds a great compliment to just about any fruit. I really like it with strawberries, pineapples, blueberrys,kiwi, and peaches.

Peach delight: pour your favorite clear liquor over a peach half and freeze, enjoy after a nice dinner!

it was just a little spaghetti sauce, olive oil, salt/pepper, zucchini, and red peppers. tossed over a plate of brown rice pasta, and topped with sriracha.

i hate the watery store-bought pasta sauce, so i toss it in the frying pan to cook some of the water out of it.
 
hotdog, bacon, cheese and ground beef? how do you assemble that and keep it together? toothpicks? lol, those are funny.
