Water Heaters...

We have a 40 gallon and I literally sit on the toilet for 10 minutes (TMI I know) with the shower running before i get in and we never have any issues, we can also have 2 going at the same time with no issues
 
I've got a 50 with a mixing system that gives me the first hour run of a much larger tank without the cost of heating up a larger tank. Also has a setback thermo that shuts it off when we are gone/sleeping.
 
66 gallon electric. Tank is set on the warm side. Family of 3 (sometimes 4). Does a good job. Can't remember the last time it went cold.
Helped my dad put in a 50/60 gallon (can't remember exact size) replacement for their aging 40 gal. With 3-5 people in the house, and the women taking long showers, it doesn't run out of hot water. I'd say a 60 gal seems like a happy medium for storage and efficiency.
 
I had a 50 gal that we replaced at my old house with 1.5 baths. NEVER ran out of hot water. Debating going a little bigger on this house when the time comes. With 3.5 baths we can use more at once. ;)
