I want to keep the same gear in my car, but swap the axles and diff to 31 spline. Now would I be able to do this without having any experience with rear ends? The pinion gear would be left alone, so wouldn't it be pretty much be a straight swap?

Your correct, except for the preload. Since your swapping carriers, the distance between the bearings and the height of the carrier flange will vary slightly. You will need a selection of carrier shims to complete the installation correctly, or a set of shims with a selective amount of much thinner shims in between (super shims-which I do not like to use) to complete the installation. .002" make a difference with both the back lash & bearing preload.
Your correct in assuming that its not hard...its not, but this is where experience in setting up plays a big part. Its like seat time behind the wheel. The more time you spend doing it, the easier it is.
