I don't think there is anything meaningful to gain from dyno mode on the new E63s. My wife had an '08 E63 and it was only useful for (beyond having the car on the dyno) disabling the traction control and ASR completely.

There are not a lot of tuners out there for these cars and probably fewer that you would actually want to touch your car. One option for tuning that is somewhat local to you would be AMS in Chicago. Besides Renntech, Weistec and AMS there is also Eurocharged.
