Need a painter for a restoration project

I am looking for someone that can get this car back to it's previous glory and as close to original as possible. A couple of questions that I have are:

Should the car be done in it's original acrylic enamel or to do a base/clear coat?

Also the car was undercoated and I would like to clean as much of that off as possible, is there a way of removing that...mostly from the engine bay?

Acrylic enamel=no unless you feel like redoing the car again in 5 years, base clear=yes

The old undercoat they used back in the day is an oil based material, I would suggest a can of mineral spirits or laqcuer thinner...see if that helps, if not then it's gonna get messy

Should have plates and insurance on the car soon and I want to take it around to start getting quotes. Any suggestions on shops or people that car give this car a show quality finish?

Anywhere between $3000 - $8,000 I guess. I'm not looking at getting a Macco type job but I'm not looking to go broke either.

No, it can be sealed off with the proper primer or sealer
