Because noone does it....seriously there's no reason too. Get a strange rear shock, double adjustable, and a Factory spring, less than what you will pay for just one coil over.. Plenty of cars been very fast that way. I had Lakewood 50/50 on the back of my car, with a stock high mile spring cut down for ride height adjustment and went deep into the tens no problem. Seen plenty of cars go 9's and faster this way too Also i don't trust the factory upper shock mount to take that kind of weight/abuse.
 
Wolfe also sells the threaded spring perch's that go in the factory location and use coilover style springs. I think you get a couple inches of height adjustment with them.
