It's called Molecular weight, the clear substance is probably a melamine(resin)high molecular weight (120ish) and corn syrup(fructose) molecular weight close water(18-20ish) opposites.Therefore the melamine creates a cell around the dye (basically a pocket) under slooooow agitation the pocket is not broken just stretched(notice the different level of injection and how the dye follows up the trail of injection) so basically it's like stretching a piece of rubber or gum.If he were to fully agitate with a 2-4 blade spinner it would have a different result.
This is very similar to OEM waterborne urethane basecoat, if you were to see the basecoat it's almost the same consistancy of mud, somewhere in the area of 100-140 centipoise
